Tacos

Serves 4

500g mince meat
1 can red kidney beans, drained
1 packet taco mix
12 taco shells
1 cup grated cheese
1 1/2 cup spinach leaves
1 large tomato cubed
1 large carrot grated
1/2 cucumber sliced and cubed

Preheat oven as per taco shell package. Brown mince in a medium fry pan. While meat is browning mix vegetables to make a salad. Once meat is brown, add kidney beans and taco mix. Stir until combine and allow to cook on low heat for 10-15mins. Warm taco shells in oven as per package instructions. Once meat is cooked stir through grated cheese so it melts through the meat. Spoon meat evenly between each warmed taco shell. Top each with salad and serve. Enjoy!
