MAKES 15 BARS
1/2 cup natural almonds
1/2 cup unsalted cashews
1/2 cup walnuts
1/2 cup mixed seeds
2 cups rolled oats
2 cups coconut flakes
6 table spoons coconut oil
3/4 cup honey or rice malt syrup
1 cup pumpkin puree
5 tablespoons chia seeds
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon mixed spice
Preheat the oven to 160deg and line a 20X30cm slice tin with baking paper. In a large bowl mix the nuts, seeds, oats and coconut flakes. In a large saucepan melt the coconut oil, honey/syrup, pumpkin puree, spices and chia seeds and bring to a gentle boil. Turn off the heat and stir through the nut mix until well combined. Press mixture into the lined slice tin and bake in the oven for 35mins or until golden brown. Allow to completely cool before removing and cutting into 15 bars. Enjoy!
