Serves 2
2 cups cooked quinoa
1 carrot, grated
1/3 cucumber, grated
1/2 capsicum, sliced
1/2 avocado, sliced
1 bunch bok choy, chopped
6 sliced Haloumi
2 eggs
salt and pepper to taste
In a small pan fry the Haloumi until golden on each side. Remove and fry each egg, sunny side up. In 2 bowls dived the Quinoa, vegetables and Haloumi. Place the egg on top of each bowl sprinkle with salt and pepper and enjoy!
