Serves 4-6
2 sweet potatoes
1 teaspoon salt for the cooking water
Coconut oil spray
2 large eggs, lightly beaten
1/2 teaspoon salt
1 clove garlic, crushed
1/4 teaspoon pepper
1/2 cup cheddar cheese, shredded
1/2 cup bread crumbs
Peel and quarter the potatoes. Place in a medium pot and cover with cold water & salt. Bring to a boil then lower heat to medium and cook until tender (about 20 minutes). In the meantime preheat the oven to 200C and line a large baking tray with foil and spray with coconut oil spray. When the potatoes are tender, drain well. Place back in a medium bowl and add eggs, salt, garlic and pepper, quickly mashing with a fork or potato masher. Add the cheese & mix. Allow the mixture to cool slightly, just until easy to handle. Scoop out 2 tablespoons of the mixture, roll into a ball, roll in the bread crumbs to coat and place on the prepared baking tray. Spray the potato balls with coconut oil spray. Bake 10-15 minutes, until golden. Serve immediately and Enjoy!
