Serves 6
1 Cup Quinoa, rinsed
2 Cups hot water
1/4 teaspoon salt
4 tbs coconut oil
3 medium bananas, sliced
1/2 cup dates, chopped
1/4 cup shredded coconut
2 tsp cinnamon
1 cup walnuts, chopped
Preheat oven to 190C. In a pan warm 2 tablespoons of the oil over medium heat. Add the quinoa and stir well. After 3 minutes, add the hot water and salt and bring to the boil. Reduce the heat to low and cover. allow to simmer for 10 minutes. In the meantime, heat the remaining 2 tablespoons of oil in a pan. Add the bananas and cook over medium heat for 2 to 3 minutes, turning to brown on both sides. Transfer the bananas to a plate and set aside. Once the quinoa is cooked, add the dates, coconut, half the sautéed bananas and 1 teaspoon of cinnamon. Stir well and remove the pan from the heat. Pour the quinoa mixture into an oven proof dish and spread evenly. Combine the walnuts and remaining 1 teaspoon cinnamon in a small bowl and stir. Scatter the mixture over the quinoa and spread evenly to cover. Arrange the remaining cooked bananas atop the nut mixture. Bake, uncovered, for 20 minutes, until the top is golden brown and fragrant. Serve with berries and yoghurt and Enjoy!
