makes 15
1/2 cup of smooth peanut or almond butter
1/4 cup plus 1 tbs honey, maple or rice malt syrup
1/2 tsp vanilla extract
1/4 cup plus 1 tbs coconut flour
1 tbs shredded coconut
1 tbs chia seeds
2 tbs Procover
1/4 tsp salt
1/2 tbs choc chips or cocao nibs
In a medium sized bowl mix together peanut/almond butter with honey/syrup and vanilla. Sir in the coconut flour, coconut, chia seeds, Procover and salt until smooth. Roll mixture into small balls, and press a few choc chips or cocao nibs into the top of each one. Place in fridge to set. Enjoy!
