Serves 4
1/3 cup olive oil
1/2 bunch of kale
75g fresh spinach
1 cup mixed herbs (I use a mix of basil, mint, parsley and chives)
1/4 cup pistachios
3 cloves of garlic
1/4 cup grated parmesan
2 chicken breasts, cubed
1 packet of Penne pasta
In a food processor, place the kale, spinach, herbs, pistachios, garlic and cheese. Chop until fine, then with the motor running add olive oil.
In a frying pan in a small amount of oil, brown chicken. In the meantime cook pasta until al dente. Drain the pasta, then combine the pasta, chicken and pesto in a pot. Serve while hot. Enjoy!
