Serves 4
400g spaghetti
2 ripe avocados, halved, seeded and peeled
1/2 cup fresh basil leaves
2 cloves garlic
2 tablespoons freshly squeezed lemon juice
Salt and freshly ground black pepper, to taste
1/3 cup olive oil
In a large pot of boiling salted water, cook pasta until al dente and drain well.
In a food processor, combine avocados, basil, garlic and lemon juice. Season with salt and pepper. With the motor running, add olive oil in a slow stream until mixed well. In a large bowl, combine cooked pasta and avocado sauce. Serve immediately with salad and Enjoy!
