Serves 1
1/3 cup rolled oats
2/3 cup coconut water
1 banana
6 dried apricots
1/3 cup shredded coconut
1 handful Kale
3 tbs Greek yoghurt
1/4 Avocado
10 Almonds
Toppings of choice:
Mixed berries, mixed seeds
In a medium bowl, mix oats and coconut water. Cook in the microwave for 3 mins or until cooked. In a blender add all of the ingredients and blend until smooth. Pour back into the bowl and microwave for a further 2 mins or until desired temperature has been achieved. Top with chosen toppings and enjoy!
