Serves 1-2
1 Pita bread
2 tbs Greek Yoghurt
1 tbs beetroot dip or crushed beetroot
Toppings of choice
We used:
1/2 tomato diced
8 slices of zucchini
1/4 sweet potato, roasted
6 green olives
1 carrot
6 slices of beetroot
handful spinach leaves
1/2 cup grated mozzarella cheese
Preheat oven to 180deg C. Place pita bread on a tray. Mix together Greek yoghurt and beetroot dip. Spread mixture evenly over pita bread. Top with toppings of choice. Place in oven and cook for 20-30mins until cheese has melted and lightly browned. Remove from oven, slice and serve hot. Enjoy!
