Makes 12-15
3 large ripe banana
4 eggs
8 pitted dates
2 teaspoons vanilla extract
1/4 cup coconut
1/2 tsp ground cinnamon
2 tsp baking powder
1/2 cup coconut flour
1/4 cup chia seed
1/4 cup shredded coconut plus extra for on top
Preheat your oven to 150C and lightly oil a muffin tin. In a food processor add the banana & dates blend until smooth. Stir in oil, cinnamon, vanilla, eggs and baking powder until combined. Add the coconut flour, chia seeds & shredded coconut and mix throughly. Rest for 10 minutes to allow the chia and coconut flour to expand. Spoon batter equally into each muffin space. Sprinkle extra shredded coconut on top of each muffin. Bake for 30-35mins minutes (a skewer inserted into the centre should come out dry). Remove from the oven and allow to cool before turning out each muffin. Store in an airtight container or freeze in freezer bags. Enjoy!
